A sumptuous and mild Sri Lankan dish enhanced by the flavours of coconut, cashew and traditional spices. This is the perfect meal to share with the whole family at any time.

Serving Suggestion

Method

  1.  Seal meat or vegetables in a hot, oiled saucepan
  2. Add the simmer sauce and stir until bubbling
  3. Turn heat down to low and simmer until meat or vegetables are tender (20 mins for veg or chicken, longer for red meats)
  4. Optional: Before serving, stir in coconut milk and heat through
  5. Serve with steamed basmati rice

What You'll Need

  • 1 kg Diced Chicken
  • 500g/2 Cups Basmati Rice
  • Optional: 150ml Coconut Milk

Chef's Note

For a truly traditional meal, cook chicken pieces/legs with this sauce & serve with coconut sambal. Mix lime juice, salt, chilli flakes (optional), and desiccated coconut that has been soaked in warm water.
