Chai Spiced Cinnamon Scroll Recipe
Ingredients
- 180ml warm milk
- 50g butter, melted
- 1 egg, lightly whisked
- 1/4 cup sugar
- 1/2 tsp salt
- 2 1/4 tsp dry yeast
- 3 cups plain flour
- 100g sugar
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cardamom
- 1/2 tsp ground cloves
- 50g butter, melted
Method
- Prepare a 22cm cake pan by greasing it and lining the base and sides with baking paper.
- In a large bowl, combine milk with one teaspoon of sugar. Sprinkle the yeast over the mixture and allow it to sit for 10-15 minutes or until it becomes frothy.
- Add the egg, butter, and one tablespoon of water to the milk mixture. Whisk these ingredients together until well combined.
- In another large bowl, combine the flour, salt, and the remaining sugar. Create a well in the centre of the dry ingredients.
- Pour the milk mixture into the well and mix until a sticky dough forms.
- Turn the dough out onto a lightly floured surface and knead it for about 10 minutes, or until it becomes smooth and elastic.
- Place the dough in a lightly greased bowl, then cover it loosely with a clean, damp tea towel.
- Let the dough sit in a warm, draft-free place for 1 hour, or until it doubles in size.
- In a separate bowl, combine sugar and spices with the butter until a smooth paste forms.
- Preheat the oven to 200°C.
- Turn the dough onto a lightly floured surface and knead it until it’s smooth. Roll it out into a 40cm x 30cm rectangle on a floured surface.
- Evenly spread the chai-spiced filling over the dough, leaving a 2cm border at one of the long ends. Starting from the other long end, roll up the dough to enclose the filling. Use a serrated knife to cut it evenly into 9 scrolls.
- Arrange the scrolls, cut-side up, in the prepared pan. Cover them loosely with a clean, damp tea towel and set them aside for 20-30 minutes, or until the dough rises to the top of the pan.
- Bake for 10 minutes, then reduce the oven temperature to 180°C. Continue baking for an additional 20-25 minutes, or until the scrolls are golden brown.
- Allow the scrolls to cool in the pan. Enjoy your freshly baked chai-spiced scrolls!
